Inspiration: authentic french cuisine
The new chef of Benz at Kazerne finds his inspiration in the authentic French cuisine. He takes pride in adhering to the ‘head to tail’ principle. His signature dish of wild Dutch wood pigeon with homemade black pudding was decisive in the selection procedure. Benz at Kazerne warmly welcomes Thomas Voets to translate the ideas and experience he gained in the past years into his own signature, without the constriction of a pre-defined concept.
CHEF THOMAS VOETS
The past four years Thomas Voets has been the chef at Auberge Jean & Marie in Amsterdam (Bistronoom of the year2019 ). Here he cooked – in line with the concept of the owners – in a classical French style. Prior to this he gained experience in nine different restaurants. Driven by the ambiguous feelings caused by the pandemic, he decided to settle down, and move back to his Eindhoven roots. Just like previous chef Rasmus Olander decided to return to his family in Sweden.

D’N BENZ: EINDHOVEN’S FIRST FIREHOSE-AUTOMOBILE
The fine dining restaurant is located in the coach house of the former military police barracks in Eindhoven (Kazerne in Dutch). From 1923 to 1952 the fire brigade was stationed here. The spot of the impressive stainless-steel kitchen used to be the parking of Eindhoven’s first motorized firehose, which the troops affectionately nicknamed ‘D’n Benz’. Led by founders Annemoon Geurts and Koen Rijnbeek, the coach house recently has been transformed – with great attention to its original beauty – into an intimate, luxurious restaurant with soft earthy colours, rich materials and leading design.
