Millefoglie with Strawberries

Ingredients

(6 persons)

  • circa 50 strawberries

  • edible flowers

  • fresh mint

Quick puff pastry:

  • 250 g flour

  • 5 g salt

  • 2 egg yolk

  • 100 g cold water

  • 225 g cold sliced butter

pastry cream

  • 500 g milk

  • 1 vanilla pod or vanilla sugar

  • 125 g sugar

  • 20 g butter

  • 60 g flour

  • 4 eggs yolk

  • 250 g whipped cream

Recipe

Puff Pastry

  • Mix the flour, the salt and butter in a mixing bowl.

  • Add the water and 1 egg yolk.

  • Kneed it until the dough forms a ball. There swill be some pieces of butter visible.

  • Roll out the dough to around 20×25 cm and fold it into thirds – fold up one-third from the bottom, then a third from the top over it.

  • Put the dough into the fridge for an hour.

  • Repeat the rolling, folding and resting in the fridge 3 times.

  • Preheat the oven at 190 degrees, before pulling out the dough from the fridge.

  • Roll out the dough (around 1 cm thick) and prick some small holes in it with a fork.

  • Cut it into 12 pieces.

  • Brush the dough with a mix of 1 egg yolk and some water (2: 1).

  • Bake the dough until evenly browned and puffed.

 

Pastry cream

  • Boil 2/3 of milk with sugar, butter and vanilla.

  • Stir the remaining milk with the egg yolk.

  • Add the egg-and-milk mixture to the milk-and-sugar mixture and whisk it.

  • Turn down the heat of the stove.

  • Add the flour.

  • Let it cook for about 2-3 minutes while stirring constantly.

  • Transfer it to a bowl and let it cool.

  • Stir the cold dough with whipped cream and keep in the fridge until you will use it.

 

The Pastries

  • Cut the strawberries in half.

  • Take one piece of puff pastry.

  • Put some cream in the middle over the long side with the help of a piping bag.

  • Decorate both edges of the puff pastry with some strawberries.

  • Put another puff pastry on top of it.

  • Decorate the top with a layer of cream with a piping bag.

  • Top it with some strawberries.

  • Garnish it with some of the fresh mint leaves and an edible flower.

  • Enjoy!
