Home Made Pesto

  • 200 gr basil

  • 50 gr Parmesan cheese

  • 50 gr pecorino

  • 50 gr pine nuts

  • extra virgin olive oil

  • 2 cloves of garlic

  • salt


  • Roast the pine nuts in a pan without oil or butter.

  • Keep moving the pine nuts through the pan.

  • As soon as they colour, they are ready. Remove them directly from the pan and place them in a bowl.

  • Remove the skin of the garlic cloves.

  • Place the garlic, half of the pine nuts and a small amount of olive oil in a food processor.

  • Mix everything until a kind of tapenade is created.

  • Add half of the basil with a little bit of oil.

  • Mix everything.

  • Now add the last half of the basil with a little more oil.

  • Mix everything.

  • Add half of both cheeses with a little salt and again a little bit of olive oil.

  • Mix everything.

  • Basically, the base of the pesto is now finished. From here you can flavour it as you like. Chef Giovanni does this in the following way:

  • He adds the last half of the pine nuts along with extra pecorino.

  • He mixes all this into a smooth pesto.
