Toast Skagen

Missing restaurant Benz at Kazerne? Chef Rasmus Olander shares a recipe for Toast Skagen. A Swedish Shrimp salad with a small piece of toasted bread, which is typically served as a starter at Swedish dinner parties.

Tip from Rasmus: Make sure to use fresh shrimps. You can buy them at your local fish store.

Ingredients

(4 servings)

  • 4 slices of white bread

  • 320 g peeled shrimps

  • 4 tbs mayonnaise

  • 1 tbs Dijon mustard

  • 150 g whitefish roe

  • 50 g fresh dill

  • 1 lemon

  • butter

Recipe

  • Cut off the crusts of the bread slices.

  • Panfry the bread golden brown on both sides in a little butter.

  • Place on some paper towels.

  • If the prawns are large, cut them into smaller pieces.

  • Save four sprigs of dill for garnishes.

  • Chop the rest of the dill.

  • Mix with the prawns, dill, mayonnaise and mustard.

  • Portion the mixture on the slices of toasted bread.

  • Shape the whitefish roe like eggs and place on top of each toast.

  • Garnish each with a sprig of dill.

  • Serve with a slice of lemon.
